- 40g Starter
- 125g Water
- 180g Bread flour
- 3g Sea Salt
- Mix yeast & water 加酵母 & 水
- Add flour 加面粉
- Leave it for autolyze (30mins) 不要盖布,不要吹风
- Stretch & Fold 折叠 x15
- Rest 休息 30Mins
- Repeat Step 4 & 5 (x8, x6, x6)
- Preshape into circle (On Table)
- Rest 休息 1Hour
- Shaping into banneton 整形,放入篮子
- Rest 休息 30-40Mins
- Cover and rest in refrigerator (4°C) for 2.5Hours
- Preheat oven 预热烤箱 (230°C) (around 1 hour)
- Keep in freezer (0°C) for 30Mins
- Scoring
- Bake in preheated oven 230°C for 15Mins
- Drop temperature to 190°C for 20-25Mins
Open Bake / Baking Stone
放入预热230度的烤箱,烤15分钟。
烘烤15分钟后,降温到190°C 继续烘烤20-25分钟。
Dutch Oven
预热 1 个小时(连同盖子)
放入预热250度的烤箱,烤25分钟 (连盖)
220度,开盖烤20分钟
125ml水 可以换成 蝶豆花水
坚果、干果类 可在 Step 4-6 之前陆续加
